Ham Roll-Up Assembly
These keto ham and cheese roll-ups come together quickly - it’s all downhill after you scramble those eggs to your liking. I recommend folding in a bit of shredded cheese at the end.
Lay out a slice of deli meat, add some scrambled egg - a bit off center - and top with salsa. Starting with the short ham side, roll it over and around the salsa and egg filling, like you’re making a nice little enchilada.
You could stop there and chow down, but if you’ve got the time, sprinkle some cheese on top and pop those roll-ups in the oven for a few minutes until it gets all melty.
The world is your salsa bar when it comes to choosing your topping. I opted for Pace because I like the chunkiness - it’s my shortcut to preparing and cooking peppers and onions for the dish.
If you prefer, you could also leave out the salsa and enjoy a simple keto ham and cheese roll-up. You really can't go wrong here.
I love enjoying these with an iced coffee. You can easily cold brew your own for iced coffees at home.
Savory Ham Rollup Substitutions
- Instead of ham roll-ups, you could also use deli-sliced turkey or chicken
- Any melty cheese will do for this dish; try pepper jack, Colby, or Oaxaca cheese
- Give guacamole or hot sauce a try in lieu of salsa
- Add some pickled jalapenos or sauteed onion to the mix
- Instead of melting cheese overtop, you could drizzle on some Chipotle Blender Hollandaise
Variations for Ham Egg & Cheese Rollups
If you're like me, then you LOVE a basic recipe that you can make your own. Here are a few suggestions to try on these Ham, Egg, and Cheese Rollups.
- Put the cheese inside the rollup, instead of on top. And experiment with different cheeses, as long as they are kinds that melt well.
- Make it SPICY by adding hot sauce, jalapenos, or a few dashes of cayenne pepper.
- Sneak some veggies in! Peppers and onions are an obvious pairing with salsa, but adding spinach works great too.
- Add more protein! You could sneak a slice of bacon or a sausage patty in there, just crumble it into pieces first.

Yes, they are! This is a fantastic low-carb breakfast perfect for those who are watching their carb intake. Note: This Ham, Egg, and Cheese Rollup recipe is keto/low carb as is, but if you deviate from the recipe too much it may no longer be.
Yes, but in my experience they just aren't as good as making them fresh. Avoid the microwave at all costs if you need to reheat. The best way to reheat leftover ham rollups is to do so on the stovetop or an oven.
Stovetop. Add leftover ham rollups to a pan over medium-low heat and cover with a lid. Let heat for around 8 minutes, flipping halfway through and recovering until heated through.
Oven. Preheat to 325. Add leftover ham rollups to a pan and cover. Bake for around 15 minutes, until heated through.
