Whether you're trying to eat fewer carbs or just looking for a new breakfast dish, these Ham-Wrapped Egg Roll-Ups are sure to hit the spot. Sometimes the simplest things are the tastiest. This is definitely one of those dishes. Lovely scrambled eggs topped with salsa (of your choosing), swaddled in a hammy meat blanket, and made extra cozy with melty cheese. Mmmm....

Ingredients

You only need four ingredients to make these delcious keto ham and cheese roll-ups:

  • Eggs - Large chicken eggs are used here.
  • Deli ham - Choose your favorite deli ham or use deli-sliced turkey or chicken.
  • Cheese - Any melty cheese will do for this dish; try Pepper Jack, Colby, or Oaxaca cheese.
  • Salsa: Use store-bought salsa or make your own, you can even give guacamole or hot sauce a try in lieu of salsa. Try it with my pickle de gallo or green salsa if you're craving something new and unique to try!

...And a pat of butter, drizzle of olive oil, or spoonful of bacon grease to cook your eggs in. That's it!

Variations

If you're like me, then you LOVE a basic recipe that you can make your own. Here are a few suggestions to try on these Ham, Egg, and Cheese Rollups.

  • Stuff with cheese. Put the cheese inside the rollup, instead of on top. And experiment with different cheeses, as long as they are kinds that melt well.
  • Make it SPICY. Add hot sauce, pickled or fresh jalapenos, or a few dashes of cayenne pepper.
  • Sneak some veggies in! Peppers and onions are an obvious pairing with salsa, but adding spinach works great too.
  • Add more protein! You could sneak a slice of bacon or a sausage patty in there, just crumble it into pieces first.
  • Serve with a sauce. Instead of melting cheese overtop, you could drizzle on some Chipotle Blender Hollandaise or freshen the dish up with an herby Chimichurri Sauce.

How to Make Ham, Egg, and Cheese Roll-Ups

These keto-friendly ham and cheese roll-ups come together quickly - it's all downhill after you scramble those eggs to your liking. I recommend folding in a bit of shredded cheese at the end.

  1. Step 1: Assemble. Lay out a slice of deli meat, add some scrambled egg - a bit off center - and top with salsa.
  2. Step 2: Roll 'Em. Starting with the short ham side, roll it over and around the salsa and egg filling, like you're making a nice little enchilada. 
  3. Step 3: Add Cheese and Bake. You could stop there and chow down, but if you've got the time, sprinkle some cheese on top and pop those roll-ups in the oven for a few minutes until it gets all melty. 
  4. Step 4: Add Salsa and Serve. The world is your salsa bar when it comes to choosing your topping. I opted for Pace because I like the chunkiness - it's my shortcut to preparing and cooking peppers and onions for the dish. 

If you prefer, you could also leave out the salsa and enjoy a simple keto ham and cheese roll-up. You really can't go wrong here.

I love enjoying these with an iced coffee. You can easily make your own cold brew for iced coffees at home. For a side serve it with this Tajin Fruit Salad or these Air Fryer Roasted Sweet Potatoes.

Top Tips for the BEST Ham and Egg Breakfast Roll-Ups

Tip 1. Customize the filling. Add sautéed veggies (like spinach, mushrooms, or bell peppers) or cooked bacon bits or sausage crumbles.

Tip 2. Use a cooking spray to prevent sticking during baking. Or lay down some parchment paper beforehand.

Tip 3. Opt on the side of a soft scramble vs. a hard cook. The eggs will continue to cook in the oven.

Frequently Asked Questions

Can you make these ham and egg roll-ups ahead of time and freeze them?

Yes, you can! Here's how you should prepare them for freezing!

Cook the scrambled eggs, then prepare the roll-ups as instructed. Leave off the cheese and salsa. Firstly, let them cool completely before preparing them for frozen storage, as this will prevent ice crystals from forming. Next, wrap each roll-up individually in plastic wrap, then wrap them again in aluminum foil. Once each roll-up is prepped, add them to a Ziploc freezer storage bag, removing as much air as possible. Freeze. Write on the outside of the bag when they were frozen as I recommend using them within 2-3 months for the best results.

When you're ready to use them, thaw completely, then pick up where you left off in the original instructions. Arrange them on a pan, add cheese, and bake!

Note: Letting the eggs cool before freezing is the best way to preserve their texture as much as possible upon reheating.

Can you reheat leftover ham roll-ups?

Yes, but in my experience they just aren't as good as making them fresh. Avoid the microwave at all costs if you need to reheat. The best way to reheat leftover ham rollups is to do so on the stovetop or in an oven.

For the Stovetop. Add leftover ham rollups to a pan over medium-low heat and cover with a lid. Let heat for around 8 minutes, flipping halfway through and recovering until heated through.

For the Oven. Preheat to 325° Fahrenheit. Add leftover ham rollups to a pan and cover. Bake for around 15 minutes, until heated through.

How do I keep the ham from tearing?

I find that Hillshire Farms Deli ham can be prone to tearing, but it works just fine. If you want to ensure success, use thicker slices of deli ham. If you have access to a deli counter, have them cut slightly thicker slices for you.

Ingredients
  

  • 1 tablespoon butter
  • 4 large eggs
  • ¾ cup shredded cheddar cheese (divided into ¼ cup and ½ cup)
  • ¼ cup salsa (I used Pace)
  • 5 slices deli ham

Instructions
 

  • Preheat your oven to 450 degrees Fahrenheit.
  • Add 1 tablespoon of butter to a medium-sized pan over medium heat.

  • Add four large eggs to a bowl and whisk until well combined.
    4 large eggs
  • Once the butter has melted, add the eggs to the pan. Scramble the eggs to your liking.
  • Remove from heat and fold in ¼ cup shredded cheddar cheese.
    ¾ cup shredded cheddar cheese
  • Lay out 5 pieces of deli ham and evenly divide the scrambled eggs between them, adding the eggs just off-center. Top each with salsa.

  • Tuck the short side of the ham over the eggs and roll it up like an enchilada.
  • Add the ham roll-up to a lightly greased baking pan, seam side down. Repeat until all 5 ham roll-ups are on the pan.
  • Sprinkle remaining ½ cup shredded cheddar cheese over the ham roll-ups.
  • Put the baking sheet in the oven on the top rack and bake for 3-5 minutes, until the cheese has melted.
  • Remove from oven and dig in!

Notes

Customize the filling with veggies (like spinach, mushrooms, or bell peppers) or cooked bacon bits or sausage crumbles.

    Why the butter? Can it be left out to reduce fat/calories?

      The butter helps prevent the eggs from sticking to the pan while they cook. You could also use an equal amount of olive oil instead.

    Can you make these ahead of time and freeze them? If so how long and what time to reheat? I'm recently been diagnosed as type 2 diabetic so I'm looking for new ideas for meals

      You can! This was such an excellent question I added it to the Q&A above. My recommendation is to freeze the roll-ups individually BEFORE baking them. That way when you thaw them for reheating, you can add cheese and bake them as instructed.
