Spam Breakfast Tacos

These "Green Eggs" and Spam Breakfast Tacos are a fun and flavorful breakfast that feature crispy fried spam, sauteed spinach, and scrambled eggs (with roasted garlic chimichurri to reinforce the green eggs theme). No green food coloring required! 

This is undoubtedly one of the most fun recipes I’ve created. A childhood fan of Dr. Seuss, Green Eggs and Ham is the book I recall the most. Probably because it involves food and I find the idea of green eggs amusing.

However, I’m not willing to use green food coloring to achieve the effect the good doctor prescribes. A bold and flavorful way to achieve green eggs is to use homemade Roasted Garlic Chimichurri. Simply add some chimichurri to your eggs before scrambling to make Chimichurri Scrambled Eggs and / or use chimichurri as the sauce to bring all the ingredients together. This Spicy Chimichurri Sauce is also a great option.

I also understand that Spam is a polarizing ingredient, one that you either love or hate. Feel free to use ham instead.

Why You Will Love These Spam Tacos

  • Great balance of flavor! Fatty crispy spam, wilted spinach, chimichurri spiked scrambled eggs. Chimichurri is fresh and acidic and is a beautiful addition to the scrambled eggs as they cook or used as a sauce on top.
  • Easy to make. While this is a multi-ingredient prep-type recipe, each one comes together quickly. The spam simply needs to crisp and cook through, the eggs cook to a gentle scramble, the spinach tossed in to cook at the end. While chimichurri isn't required here, this easy chimichurri recipe is pretty quick if you'd like to make it.

What is Chimichurri?

When people ask me what the heck chimichurri is, I describe it as an Argentinean pesto (sans nuts). Because, like pesto, chimichurri is fresh and herbaceous.

Chimichurri is a condiment with Argentinean origins that typically contains parsley, garlic, vinegar, olive oil, and flakes of chili pepper. It usually accompanies grilled meats, like steak. 

It really cuts the rich fattiness of the fried spam quite brilliantly!

Ingredients

  • Spam - I usually keep the original around, but you can reach for all sorts of fun flavors now. Bacon Spam is good here, shocking I know.
  • Eggs - A few large eggs to make scrambled eggs for the breakfast tacos.
  • Chimichurri - This could be omitted in a pinch, but its acidic brightness is really great against fatty spam.
  • Spinach - Brings a healthy element and keeps with the "green eggs" theme.
  • Flour tortillas - I like the street style flour tortillas here, toast them over an open flame or in a frying pan before serving.

How to Make Spam Breakfast Tacos - Directions

Once you have your homemade chimichurri, you’re ready to go! 

  1. Step 1. Cook spam over medium-high heat until lightly crisp.
  2. Step 2. Remove from pan and let rest on paper towels to remove excess grease.
  3. Step 3. Crack six large eggs into a bowl. Add 1 ½ tablespoons of chimichurri to the bowl of eggs. 
  4. Step 4. Whisk vigorously for a few seconds, until well combined.
  5. Step 5. Melt a pat of butter in a pan over medium heat (go ahead and use the Spam pan). Add chimichurri egg mixture and scramble until your preferred cook is achieved. 
  6. Step 6. In a separate pan, saute spinach until wilted, 2-3 minutes. Season with a few dashes of salt and pepper, to taste.
  7. Step 7. Assemble! Divide the sauteed spinach, chimichurri scrambled eggs, and spam between four street-style tortillas.
  8. Step 8. Top with additional chimichurri and/or feta or other crumbly cheese.

Expert Tips

  • Cut the spam into slices first, then cubes. I like to slice the spam into thin strips or small cubes to maximize the surface area in the pan, ensuring it crisps up evenly. This helps to add a nice texture contrast to the soft tortilla and scrambled eggs.
  • Corn or flour? I typically see flour tortillas swaddling breakfast tacos, so that's what I usually opt for but corn tortillas are great here. The earthiness of the corn plays well with fatty spam.

What to serve with Spam Tacos?

You should try pairing these delicious spam tacos with Refried Beans, Black Bean Soup, or Air Fryer Chicken Nachos. Beans offer a lighter, earthier counterpart and nachos are always a good idea.

What else could I add to Spam Tacos?

Fresh herbs like basil or parsley, a few dashes of hot sauce or pico de gallo, or a few crispy breakfast potatoes are all great additions here.

Ingredients
  

  • 4 slices spam (¼ inch thick slices, cut into cubes or rectangles)
  • 6 large eggs
  • 1 ½ tablespoons chimichurri
  • 1 pat butter
  • 2 handfuls fresh spinach
  • 4 street style flour tortillas 
  • salt (to taste)
  • feta or other crumbly cheese (optional)

Instructions
 

  • Cook the spam cubes or rectangles in a pan over medium-high heat, flipping occasionally, for 5-6 minutes or until slightly crisp. Remove from pan and let cool on paper towels to remove excess grease.

  • Crack 6 large eggs into a bowl. Add 1 ½ tablespoons chimichurri to the bowl. Whisk vigorously until well combined. 
    6 large eggs, 1 ½ tablespoons chimichurri
  • Reduce heat in the pan to medium and add a pat of butter (if necessary, though there may be enough Spam grease to use). When the butter has melted, add the egg and chimichurri mixture.
  • Cook, moving the eggs across the pan frequently, until desired cook is achieved. 
  • In another pan, melt a pat of butter over medium heat. Add two generous handfuls of spinach to the pan, along with a few dashes of salt, if desired. Cook until just wilted, around 2-3 minutes.

  • Remove eggs and spinach from heat and get ready to assemble!
  • Put two tortillas on each plate. Divide spinach evenly amongst four tacos. Divide chimichurri scrambled eggs evenly between four tacos. Divide Spam evenly between four tacos. 
  • Garnish with additional chimichurri and/or feta (or other crumbly cheese).  Enjoy your adult-friendly Green Eggs and Spam! 

Notes

*Nutrition information was calculated with an online nutrition calculator and should be considered estimates.
Cutting the spam up beforehand maximize the surface area in the pan, ensuring it crisps up evenly. This helps to add a nice texture contrast to the soft tortilla and scrambled eggs.
You could also use corn tortillas. The earthiness of the corn plays well with fatty spam.
