These adult-friendly Green Eggs and Spam Tacos are a fun and flavorful breakfast that feature crispy fried spam, sauteed spinach, and roasted garlic chimichurri eggs. No green food coloring required!
This is undoubtedly one of the most fun recipes I’ve created. A childhood fan of Dr. Seuss, Green Eggs and Ham is the book I recall the most. Probably because it involves food and I find the idea of green eggs amusing.
However, I’m not willing to use green food coloring to achieve the effect the good doctor prescribes. A bold and flavorful way to achieve green eggs is to use homemade Roasted Garlic Chimichurri. Simply add some chimichurri to your eggs before scrambling to make Chimichurri Scrambled Eggs and you’re well on your way to Green Eggs and Spam Tacos! Or Chimichurri Scrambled Eggs and Spam Tacos, if you prefer.
I also understand that Spam is a polarizing ingredient, one that you either love or hate. Feel free to use ham instead.
What is Chimichurri?
When people ask me what the heck chimichurri is, I describe it as an Argentinean pesto (sans nuts). Because, like pesto, chimichurri is fresh and herbaceous.
Chimichurri is a condiment with Argentinean origins that typically contains parsley, garlic, vinegar, olive oil, and flakes of chili pepper. It usually accompanies grilled meats, like steak.
How do you make Chimichurri?
A food processor or blender makes making homemade chimichurri a breeze! This recipe for Chimichurri Scrambled Eggs uses my recipe for Roasted Garlic Chimichurri which is a variation of more traditional ones. To make Roasted Garlic Chimichurri you’ll need:
- 1 head roasted garlic
- 1 bunch fresh Italian parsley (around 1 to 1 ½ cups, packed)
- ¼ cup fresh cilantro, packed (optional)
- ½ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- ¾ teaspoon red pepper flakes
- ½ teaspoon ground cumin
- ½ teaspoon fine sea salt
- Add all ingredients to a food processor, and puree until smooth.
- For best results, wait at least 2 hours (at room temperature) before use to let the flavors develop.
I STRONGLY DISLIKE cilantro. It smells and tastes like soap. This recipe turns out just fine without it, but I add it sometimes because my husband likes it and I guess I’ve grown fond of him. When I add a smaller amount as suggested, I can’t really taste it. But if you hate cilantro so much you can’t fathom spending a dime on the vile herb, simply omit it. I understand.
What do I need to make Green Eggs and Spam Tacos?
To make Chimichurri Scrambled Eggs and Spam Tacos for two, you’ll need:
- 6 large eggs
- 1 ½ tablespoons roasted garlic chimichurri
- 2 handfuls of fresh spinach
- 4 slices spam, ¼ inch thick, cut into cubes or rectangles
- 4 street style flour tortillas
- Roasted garlic chimichurri, for additional topping
- Salt and pepper, to taste
- Feta or other crumbly cheese (optional)
How do you make Green Eggs and Spam Tacos?
Once you have your homemade chimichurri, you’re ready to go!
- Cook spam over medium-high heat until lightly crisp.
- Remove from pan and let rest on paper towels to remove excess grease.
- Crack six large eggs into a bowl. Add 1 ½ tablespoons of chimichurri to the bowl of eggs.
- Whisk vigorously for a few seconds, until well combined.
- Melt a pat of butter in a pan over medium heat (go ahead and use the Spam pan). Add chimichurri egg mixture and scramble until your preferred cook is achieved.
- In a separate pan, saute spinach until wilted, 2-3 minutes. Season with a few dashes of salt and pepper, to taste.
- Assemble! Divide the sauteed spinach, chimichurri scrambled eggs, and spam between four street style tortillas.
- Top with additional Roasted Garlic Chimichurri and/or feta or other crumbly cheese.
How long does Chimichurri last?
Roasted Garlic Chimichurri lasts about a week in the refrigerator; store in a covered container like a Mason jar. Bring to room temperature before use.

Green Eggs and Spam Tacos
Ingredients
- 6 large eggs
- 1 ½ tablespoon roasted garlic chimichurri (see recipe above)
- 2 handfuls of fresh spinach
- 4 slices spam ¼ inch thick slices, cut into cubes or rectangles

Instructions
- Cook the spam cubes or rectangles in a pan over medium-high heat, flipping occasionally, for 5-6 minutes or until slightly crisp. Remove from pan and let cool on paper towels to remove excess grease.
- Crack 6 large eggs into a bowl. Add 1 ½ tablespoons Roasted Garlic Chimichurri to the bowl. Whisk vigorously until well combined.
- Reduce heat in the pan to medium and add a pat of butter (if necessary, though there may be enough Spam grease to use). When the butter has melted, add the egg and chimichurri mixture.
- Cook, moving the eggs across the pan frequently, until desired cook is achieved.
- In another pan, melt a pat of butter over medium heat. Add two generous handfuls of spinach to the pan, along with a few dashes of salt and pepper. Cook until just wilted, around 2-3 minutes.
- Remove eggs and spinach from heat and get ready to assemble!
- Put two tortillas on each plate. Divide spinach evenly amongst four tacos. Divide chimichurri scrambled eggs evenly between four tacos. Divide Spam evenly between four tacos.
- Garnish with additional Roasted Garlic Chimichurri and/or feta (or other crumbly cheese). Enjoy your adult-friendly Green Eggs and Spam!
