Porchetta Seasoning consists of the "Grass", the herby part, and a simple Salt and Pepper Mix.

The Porchetta "Grass"
– 3 teaspoons dried basil
– 2 teaspoons dried rosemary
– 2 teaspoons dried oregano
– 2 teaspoons dried thyme
– 3 teaspoons fennel seeds
– 3 teaspoons dried celery
– 3 teaspoons dried parsley
– 2 ½ teaspoons red pepper flakes (optional)
The Salt and Pepper Mix
– 1 teaspoon onion salt
– 2 teaspoons garlic powder
– 1 ½ teaspoons salt
– 1 teaspoon black pepper
