What to do with Leftover Nachos

There’s more you can do with leftover nachos than you might think. They are perfect repurposed in soups, casseroles, chilaquiles, and more!

Nacho Chilaquiles

Chilaquiles are essentially corn tortilla pieces that are fried, cooked in salsa, and sprinkled with cheese, and served with over-easy eggs on top. Swapping in leftover nachos is a fantastic substitute.

Instead of using tortillas in an Enchilada Casserole, use layers of leftover nachos. It’s super tasty and makes a truly comforting dish.
