Chilaquiles are essentially corn tortilla pieces that are fried, cooked in salsa, and sprinkled with cheese, and served with over-easy eggs on top. Swapping in leftover nachos is a fantastic substitute.

When in doubt, make soup! Leftover nachos can be “dissolved” into soups or used as a garnish.
Pick off those tasty toppings from those leftover nachos and put them on top of a piping hot baked potato. Beans, taco meat, and jalapenos all belong!
