Ingredients
– ground beef, pork, chicken, or turkey or beans – pre-made gnocchi – Rotel – taco seasoning – white or yellow onion – green bell pepper – sweet corn, canned – chipotle en adobo pepper sauce – Oaxca or Monterey jack cheese (optional) – tortillas chips or tortilla strips
Cook protein, peppers & onions

Add ground meat and taco seasoning to a pan over medium heat and cook for 5-7 minutes, then add diced onion and green bell pepper and cook for 3-4 minutes
Add Rotel, corn & chipotle en adobo

Add the Rotel, corn, and chipotle en adobo pepper sauce to the pan. Lower heat to medium-low and simmer for 8-10 minutes, uncovered.
Add cooked gnocchi

Reduce heat to medium-low and add cooked gnocchi.
Stir in gnocchi

Continue cooking another 2 minutes, gently stirring the gnocchi into the mix.
Garnish with cheese & tortilla chips

Remove the pan from heat. Top with shredded cheese and cover until the cheese melts. Top with crushed tortilla chips or strips and dig in!
