Instant Pot Spanish Rice cooks up quickly with just a few ingredients - Basmati rice, cooking stock, tomato sauce, and a few seasonings.
– Basmati rice – extra virgin olive oil – canned tomato sauce – stock (chicken, vegetable) – garlic powder – onion powder – paprika – parsley or cilantro (garnish)
Saute rice for 3-4 minutes in olive oil.
Add tomato sauce and stir until combined.
Add chicken or vegetable stock and seasonings. Make sure rice is submerged.
Cook on High Pressure for 4 minutes. Let naturally release for 10 minutes.
Remove the lid, fluff the rice, and serve with fresh parsley and cilantro.
