INGREDIENTS
– 3 cups leftover pork butt (shredded) – 1 (8-ounce) block pepper jack cheese (shredded) – ¾ cup red onion (finely diced) – 9 small corn tortillas – 2 cups Roasted Green Tomato Salsa
Preheat your oven to 375 degrees Fahrenheit, and prepare the ingredients.

Spray baking dish with cooking spray, coat bottom with a layer of salsa, followed by a layer of tortillas.
Add a layer of salsa, followed by shredded pork, diced onions, and shredded cheese. Repeat.
