Instant Pot Spanish Rice
The Instant Pot offers a shortcut to your favorite restaurant rice! Instant Pot Spanish Rice cooks up quickly with just a few ingredients - Basmati rice, cooking stock, tomato sauce, and a few seasonings.
COOK TIME: 18 MIN
– 1 cup Basmati rice
– 1/2 tsp extra virgin olive oil
– 1 8 ounce can tomato sauce
– 1 cup stock (chicken, vegetable)
– 1/2 tsp salt optional
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– 1/2 tsp paprika
– Chopped parsley or cilantro
Saute rice for 3-4 minutes in olive oil.
Add Tomato Sauce
Add tomato sauce and stir until combined.
Add Stock and Seasonings
Add chicken or vegetable stock and seasonings. Make sure rice is submerged.
Cook on High Pressure for 4 minutes. Let naturally release for 10 minutes.
Fluff and Serve
Remove the lid, fluff the rice, and serve with fresh parsley and cilantro.
