Serves 2 people
– 2 boneless skinless chicken thighs
– 2 large flour tortillas
– 2 cups shredded smoked gouda cheese
– 18-20 sliced pickled jalapenos (optional)

Pre-heat your grill to medium heat, or 400 degrees Fahrenheit.
Grill chicken until cooked through. Let rest for 5 minutes then slice thinly.
Assemble the quesadillas, layering shredded cheese, grilled chicken, and pickled jalapenos onto tortillas.
Add quesadillas to grill. Grill for 3-4 minutes per side.
Remove quesadillas from grill, cut into four pieces each and serve.
