Buffalo Chickpea Quesadilla
– 1 (15.5) ounce can of chickpeas – ½ small yellow onion, finely diced – 1 tbsp butter or olive oil – 1 clove garlic, finely diced – 3 tbsp Frank’s Red Hot Buffalo Wing sauce – 2 large flour tortillas – 1 cup shredded mozzarella cheese – 1 cup shredded cheddar cheese
Assemble the Quesadilla
Layer shredded cheese and buffalo chickpea mixture on a tortilla.
Cook and Serve!
Serve with Ranch or Blue Cheese dressing and enjoy!
